Nutrient Analysis, Amino acid profile and Phytochemical analysis of Gongronema Latifolium

Abstract:

Gongronema latifolium was processed forproximate composition mineral content, amino acid characteristics and phytochemical analysis. Results of proximate compositions give the highest value of crude protein; 66.32±0.21, moisture contents; 3.12±0.15mg/100g, ash content; 12.46±0.18mg/100g, fat; 14.88±0.32mg/100g, crude fibre; 1.60±0.18mg/100g, and Nitrogen free extractive; 1.57±0.44mg/100g.Phytochemical content of the sample contain Tannin; 2.48±0.63mg/100g, total phenol; 5.11±0.46mg/100g, phytate; 25.62±0.52, oxalate content; 5.37±0.91, alkaloids; 2.11±0.27, saponin; 1.46±0.36 and flavonoid; 0.65±0.6. The sample contain the highest concentration of magnesium; 16.90±0.40 and the least concentration of selenium; 0.01±0.02 while lead and mercury were not detected in the same indicating that the sample cannot pose risk of lead poisoning. In addition, amino acid content of Gongronema latifolium contains both essential and non-essential amino acid with glutamic acid having the highest value [11.58] g/100g and tryptophan having 0.75g/100g concentration in the sample. The total amino acid is 75.21g/100g.
